Grain-Free Bread

A delicious high-protein, grain-free bread.  A wonderful and easy alternative to the typical gluten-free breads on the market.

It’s a recipe that I discovered on elanaspantry.com and couldn’t wait to spread the word!

  • 2 cups almond flour (the original recipe requires blanched flour but can also be made with freshly blended almonds)
  • 2 Tbsp coconut flour
  • 1/4 cup flaxmeal
  • 1/4 tsp sea salt
  • 1/2 tsp baking soda
  • 5 large eggs
  • 1 Tbsp coconut oil (may want to warm it up a little so that it’s in its liquid form)
  • 1Tbsp honey
  • 1 Tbsp apple cider vinegar

Place the first 5 ingredients in the food processor and pulse a few times.  Then pulse in the eggs, oil, honey, and vinegar.  Transfer batter to a small greased loaf pan.

Bake at 350F for 30 mins.  Cool in the pan for 2 hours

*I made double the recipe and placed it in a regular loaf pan and baked for 45 mins.
